Salted Caramel Pumpkin Protein Waffles

'Tis the season for pumpkin spice every-THANG! 

 

First off...team waffle OR team pancake?!

I have been team waffle for MANY years. My parents had a heart shaped waffle iron <3 Growing up I always looked forward to Saturday mornings...I would get out my Mom's recipe book and make waffles for the family!

Pancakes were always a struggle for me. I can make them now but have had many pancake flip fails...if you feel me! 

 

When I first got into fitness, working out, and focusing on my diet...I thought I would have to give up my beloved waffles. All that flour...milk...oil....syrup...there was NO way I could eat that and achieve my goals!

 

Fast forward to now. I now understand how food is broken into 3 main macronutrients (protein, carbohydrates, fats) and that to LOSE weight all you really need to do is be in a caloric deficit. There are NO magic weight loss foods. Stay tuned for a future blog post on this :)

 

BACK to my waffles!!!

 

So, now that I understand macros and how to properly fuel my body...I eat waffles EVERY single day! Sometimes twice a day! They are SUCH a versatile meal as you can add and remove ingredients. I ate waffles everyday during my last competition prep and I still do! The ingredients have changed but they always satisfy my cravings. 

 

Adding REAL pumpkin puree is a GAME changer! It's like .... pumpkin pie ... in a waffle. YAS!

High in fibre, potassium, Iron, and Vitamin A...pumpkin is an amazing low-carb food that will keep your taste buds and digestion happy!

 

The Recipe:

 

20g Magnum Quatrro Protein Powder (I used Salted Freakin' Caramel flavor)

40g Kodiak Protein Pancake/Waffle Mix (can substitute 30g oats-just blend all ingredients in blender)

1/2 cup pumpkin puree

50g egg whites

1 tsp. baking powder 

1/2 tsp. cinnamon 

1/4 tsp. nutmeg

 

Mix all ingredients and add water to consistency.

 

Pop in the waffle iron or make pancakes!

 

Top with whatever your heart desires! I used powdered peanut butter, strawberries, and ED Smith sugar free syrup this time. 

 

Macros (without toppings):

*I always alter my pancake/waffle recipe depending on the other meals I have that day! This day I used my fat macros on steak, avocado, eggs, and peanut butter. Otherwise I would add coconut oil or an egg instead of egg whites!
